Country Sundays--A Scripture Cake

1/2 Cup Judges 5:25, last clause

2 Cups Jeremiah 6:20

2 Tablespoons I Samuel 14:25

6 Jeremiah 17: 11

1 1/2 Cups I Kings 4:22

2 Teaspoons Amos 4:5

II Chronicles 9:9, to taste

Pinch of Leviticus 2:13

1/2 Cup Judges 4:19, last clause

2 Cups Nahum 3:12

2 Cups Numbers 17:8

2 Cups I Samuel 30:12

Whip the Judges, Jeremiah, and I Samuel until light. 

Beat the 6 Jeremiah yolks and add. Add Kings, Amos, Chronicles, and Leviticus alternately with Judges. Fold in Nahum, Numbers, and Samuel, 

then also the 6 Jeremiah whites, beaten stiff. 

Bake 2 hours in greased 10 inch tube pan at 300 degrees.

Country Sundays were once the highlight of many a hard week's labor.

It was a day to catch up with friends and family,

to rest and relax,

but most of all, to come together in worship.

Many times, after church services there was "dinner on the grounds". . . .

where long plank tables were set up outside under the trees

and pot luck dishes were there for the eating.

One of the cakes often baked for the church dinner was the Scripture Cake.

This old recipe, originally from England, 

has been in my recipe collection for so many years, 

I'd forgotten all about it.

In our church, these cakes often showed up 

at Bake Sales for a money-making project.

A small card with the recipe was enclosed.

It's a delicious cake!

Here's a translation. . . .but, be sure and look up the scriptures first!

Beat together until light and fluffy 1/2 cup butter, 2 cups sugar, and 2 tablespoons honey. Beat 6 egg yolks until light and add. Add sifted mixture of 1 1/2 cups sifted flour, 2 teaspoons baking powder, 2 teaspoons cinnamon, 1/2 teaspoon ginger, 1 teaspoon nutmeg, 1/2 teaspoon cloves and a pinch of salt, in alternate portions with 1/2 cup milk. Stir in 2 cups chopped figs (apple will work, too), 2 cups raisins, 2 cups chopped almonds. Fold in 6 egg whites, beaten stiff. Bake the cake in well-greased 10 inch tube pan for 2 hours at 300 degrees.
